The Gluten and
Casein Free Diet
“Gluten is a protein present in grains, mainly wheat,
rye, oats and barley. Casein is a milk
protein, present in cow, goat, sheep, human and all other milk and milk
products…these proteins do not get digested properly and turn into substances
with similar chemical structures to opiates, like morphine and heroin…These
opiates from grains are thought to get through the blood-brain barrier and
block certain areas of the brain, just like morphine or heroin would do.” Dr. Natasha Campbell-McBride, GUT & PSYCHOLOGY SYNDROME
This
diet can be extremely beneficial in treating Autism, ADD, IBS, Chrons and other
neurological and digestive disorders. If
gut issues continue it may be worth looking at the Specific Carbohydrate Diet (SCD) or The Gut & Psychology Syndrome (GAPS)
diet. It is best to consult a
knowledgeable practitioner.
Gluten and casein can be
hidden in many unexpected foods such as liquorice, soy sauce, vinegar. Certain flavourings are stuck to food with
milk powder or flour. This includes most
processed foods, deli meats, margarines and many prepared stocks and soups,
frozen chips, soy cheese.
Gluten is also used as a
binder in some pharmaceutical products.
Most food manufacturers have toll-free customer service numbers and will gladly
check on the source of these questionable ingredients. Until you are sure a
product is CF/GF, it’s best not to use it.
