Kitsa spent her 20s and 30s as a lawyer, constantly under stress and eating poorly. She suffered allergies and nutritional difficulties, along with irregular or substandard meals. The birth of her son motivated her to press reset: to search for the best possible start in life she could give her son, and the healthiest way to raise him. In the process, she rediscovered the gift of fermented foods, which have been in most cultures for centuries. Her research led her to nutrient-dense, enzyme-rich, organic wholefoods – Foods that not only taste great, but work like medicine to create a happier, healthier you.
Her kitchen in Artamon uses the process of fermentation to create meals that are more nutritious and digestible than the plants they come from. Her cultured vegetables are easily assimilated by the body, improve gut health, and are stuffed full of probiotic nutrition, enzymes, organic acids, and vitamins B, C, and K. Kitsa makes food that is free of gluten, dairy, soy, corn, and sugar, which improves the immune system, and which eliminates toxins.
