Ingredients:
1 young coconut
½ avocado, stone and skin removed
1 large handful or silverbeet or other green (stalks removed and leaves roughly chopped)
1 small handful of mint leaves
⅓ cup nut or coconut milk
2 eggs
1 tbsp coconut oil
1-2 tsp gelatine or collagen powder
3 soaked walnuts
3 soaked macadamia nuts
½ tsp ground cinnamon
1 vanilla pod (split and scraped)
Method:
1. Open coconut and pour its water into the blender. Scoop out the flesh and roughly chop.
2. Combine coconut flesh and remaining ingredients with the coconut water in the blender. Blend until smooth and serve immediately.
