Lettuce Cups

Cooking Time: 30 minutes

Ingredients:

  • Iceberg lettuce leaves (whole)
  • 250 g minced turkey or beef
  • 1 clove of garlic
  • pinch sea salt
  • pinch five-spice powder
  • 1 small packet bean thread vermicelli (GF/CF only)
  • 1 teaspoon ginger
  • 1 teaspoon tamari (GF/CF only) – try fish sauce if soy sensitive
  • ½ cup rough chopped coriander
  • 4 spring onions finely sliced
  • ½ cup dried, sliced shitake mushrooms
  • ½ cup brazil nuts, roughly chopped

Method:

Choose lettuce leaves that have a good bowl shape, wash well and drain.
Place noodles in boiling water.
Place mushrooms in boiling water.
Sauté mince, spices and mushrooms with some of the water.
Drain and chop noodles, stir through.
Cook away moisture, add nuts and stir through other ingredients. Serve warm in lettuce cups.
