Mayonnaise

Preparation Time: 5 minutes

Ingredients:

  • 1 whole egg
  • 1 cup of olive oil or slightly more
  • 1 tablespoon white vinegar or lemon juice
  • ¼ teaspoon dry mustard powder
  • salt and pepper to taste
  • honey to taste

Method:

Blend in food processor for a few seconds: egg, lemon juice (or vinegar) mustard, salt, pepper and honey.
With machine running, add the oil in a fine stream.
Do not add oil quickly, taking approximately 1 minute (as mayonnaise thickens, the sound of the machine will deepen).
