Ingredients:
2 boneless chicken breasts, cut into cubes
2 sweet potatoes
1 cup fresh spinach (could substitute for a cup of celery if you want to avoid spinach?)
1 small yellow onion
2 cloves garlic
½ cup chicken broth
2 tbsp olive oil
1 pinch paprika
Sea salt, to taste
Method:
1. Add olive oil to a saucepan over medium-high heat then add onion and garlic, saute for about 5 minutes.
2. Add chicken, sweet potatoes, spinach (celery), paprika, and salt. Pour chicken broth into the saucepan.
3. Bring the broth to a boil before reducing heat to medium-low and simmering until the chicken no longer has pink in the middle and the sweet potatoes are fully cooked – about 30 minutes. Serve and enjoy!
