Vegetable Lasagne

Cooking Time: 20 minutes

Ingredients:

  • 2 cups bolognaise sauce
  • 2 cups pumpkin soup
  • ½ cup cheese (if tolerated)
  • zucchini or eggplant

Method:

  • Finely sliced zucchini and eggplant strips to be used in place of pasta sheets.
  • Construct by layering sauces between vegetable strips.
  • Bake 180°C for 20 minutes or till done.
