Waldorf Salad

Preparation Time: 20 minutes

Ingredients:

  • 3 cups apples, cut in chunks (peeled or unpeeled)
  • 1 cup pineapple chunks (fresh or canned, unsweetened)
  • ¼ cup raisins
  • 1 stalk celery, chopped
  • ½ cup thinly sliced green pepper (optional)
  • 1 cup thinly sliced raw carrots (optional)
  • ½ cup walnut pieces

Method:

  • Combine all ingredients.
  • Blend with 1 cup of yogurt dressing or mayonnaise.
  • Serve on lettuce leaves.
