Preparation Time: 15 minutes
Cooking Time: 5 minutes
Ingredients:
- 500 g unsalted butter
- 4 sheets cheesecloth
Method:
Melt butter on a low heat in a heavy based pan – do not stir.
Cook butter until golden.
Golden solids will form and fall to the bottom and foam on the top will need to be skimmed off. Remove from heat before it darkens in colour.
Strain through a cloth-lined sieve, into a dry pot.
Transfer by straining again into a glass jar for storage.
